With a rather ripe Banana and a squishy mango sitting lonely in the fruit bowl….here’s a little healthy treat that I made for my boys for when they came home from their boxing session!
These muffins are perfect for me too as a post workout treat. I say ‘treat’ because as a little warrior princess looking to build some lean muscle I would usually choose a good quality meat protein source post workout, but occasionally it’s nice to have something different. Most importantly these give me the right percentage of post workout carbohydrate.
Ingredients
2 Cups Oat Flour (I use Freedom Oats in the Food Processor)
1/2 Cup Desiccated Coconut
2 t Baking Powder
2 t Natvia
2 Eggs
1 Cup Natural Yoghurt
1 t Vanilla Extract
1 Large Mango Diced
1 Small Ripe Banana
Method
Preheat Oven to 180 degrees celsius
Put all dry ingredients into a mixing bowl. Mash banana and combine with mango, natural yoghurt, eggs and vanilla extract. Pour wet ingredients in with dry ingredients and mix well with a wooden spoon.
Pour into muffin moulds and bake for 15 minutes or until cooked.
Makes 8
